Maple Roasted Potato Chicken

Fall is in full swing in Portland. The trees are changing colors. The weather is cooling, especially at night and we have quite a few blustery Winnie the Pooh days that get me a little too excited!


So in lew of this wonderful season and to the add to the theme that Annie started, here is another savory recipe for everyone to try out for fall and this one is pretty easy!

Maple Roasted Potato Chicken

Ingredients:
2 boneless, skinless chicken breasts
3-4 small red potatoes, peeled and diced into 1 inch cubes
1 yellow onion, cut into wedges
salt and pepper
1 tbsp olive oil
3 tbsp maple syrup
5-6 thyme sprigs (can used dried if don't have fresh)
Instructions:
Heat oven to 400 degrees. Spray a 9"X9" or 9"X13" pan with nonstick cooking spray. Place chicken breasts in the pan and arrange the potato cubes and onion wedges around the chicken. Drizzle everything with olive oil and then sprinkle it with salt and pepper. Then drizzle the maple syrup evenly over everything. Top it with thyme springs (if you don't have fresh I have sprinkled the entire dish with dried thyme and it tasted just as good). Bake for 30-40 minutes (depending on how thick your chicken is).
